I'm Joseph Timarchi, and I joined The Felix Project in September as the Felix Bakes Manager.
At Felix Bakes we create a range of delicious baked goods each week. I’m excited to share one of my favourite recipes with our Felix Heroes this month. I love bringing people together over food, and this apple and almond cake is not only mouth wateringly good but also easy to make. I’m using seasonal ingredients as we’re coming to the end of the apple season, and we have lots to use up in our warehouses.

Step 1:
Combine all dry ingredients in a medium sized bowl, mix thoroughly.
Step 2:
Combine the oat milk (or regular/nut milk if using), apple sauce (if using), vegetable oil, and lemon juice. Then gently mix the wet mixture into the dry ingredients until smooth - taking care to not over-mix.
Step 3:
Fold through the diced apples gently until evenly combined. You should have a nice thick batter.
Step 4:
Pour mixture onto 500g greased and lined tins. Sprinkle with demerara sugar and bake at 170C for 30-40 minutes or until a skewer or a sharp knife comes out clean.
Step 5:
Let it rest for 10 minutes. And then enjoy!
