A simple and sweet Scottish biscuit that can easily be made vegan by swapping out the butter for a non-dairy alternative.

Step 1:
Gather all your ingredients and preheat your oven to 175C.
Step 2:
Mix all your measured out dry ingredients into a medium bowl.
Step 3:
Gently melt your butter.
Step 4:
Pour your melted butter in with your dry ingredients (or butter substitue if going for a vegan option).
Step 5:
Squeeze in your golden syrup. If you like your biscuits sweeter, add an extra squeeze. If you like them less sweet, add less syrup. There isn't a right or wrong, just personal preference.
Step 6:
Stir the mixture just until it comes together and everything is combined.
Step 7:
Using your hands, form mixture into small balls and place on a tray with greaseproof paper. Work quickly as the mixture can dry out, making it much more crumbly to work with.
Step 8:
Mash them down firmly with a fork and bake in the oven at 175C for 10 minutes. Watch closely as they can burn quickly. They are ready when golden.
Step 9:
Leave to cool (on a wire rack if you have one). The cookies will seem soft, which will make you think they're not done, but they will harden as they cool.
Step 10:
Once cool, they are ready to serve!

This recipe isn't actually mine but has been in my family for many years. My Granny Pearl used to bake these biscuits for us every time we stayed with her, and the running joke was always that they took longer to cook than they lasted in the house. She sadly passed away last year, but my family continues to make them; it’s such a special way to feel connected to her.
