Mimi's harvest desert
The harvest season is upon us, and it’s an exciting time here at The Felix Project. Every autumn our dedicated volunteers head to our partner farms in Kent and Sussex to rescue tonnes of fruit. The plums, apples and pears are then redistributed to community organisations across London to help feed people experiencing hunger.
For this month’s recipe, our colleague Mimi has created a plum and frangipane cake to welcome in the harvest season, using some of the plums our volunteers have rescued. The cake is not only delicious but can easily be made vegan too.
Mimi is the Development Chef at Felix. That means she spends her days dreaming up new recipes that help us use more surplus food and extend the life of the produce. What Mimi loves about her job is getting creative with rescued ingredients. And knowing that her work helps prevent good food from going to waste keeps her motivated.
Step 1:
Get your ingredients ready. If you want to make a vegan version of the cake, choose plant-based milk and yoghurt. Preheat your oven to 175c and line an 8" baking tin.
Step 2:
Slice the plums in half, remove the stone, slice into half-moons and set aside.
Step 3:
Combine flax seeds with water and leave to absorb for 5-10 mins. Whilst you're waiting, weigh out the rest of the wet ingredients in one bowl, and the dry in another. Once flax has absorbed, combine the ingredients of all three bowls. Pour the batter into the lined tin and set aside.
Step 4:
Weigh out all frangipane ingredients in one bowl and mix to combine. Gently spread the frangipane over the batter.
Step 5:
Starting from the outside start placing the plum moons around the edge of the cake working your way in to cover the cake. Gently sprinkle the sugar on top.
Step 6:
Bake for approx 40-45 mins or until a skewer comes out clean. Leave to cool and then using a fine sieve sprinkle some icing sugar on top.
Step 7:
Enjoy the cake with friends and family.
